- 200g couscous ,
- a large handful pistachios , toasted and chopped
- a bunch coriander
- bunch of mint
- 2 oranges , juiced and zested
- handful of golden sultans
- Splash of olive oil
- 3 oranges
- In a bowl add the zest and juice of the oranges to couscous, chopped
- sultanas and a splash of olive oil
- Once the couscous is plump and ready add the chopped mint and coriander
- and pistachios.
- Toss, season to taste and serve.
