Shepherd’s Salad

Ingredients

  • 1 iceberg, 2 Romano or 1 large cos lettuce, finely shopped or shredded
  • 1 large cucumber de-seeded and diced
  • 5 tomatoes diced
  • 1 large handful of flat leaf parsley roughly chopped ( same size as tomatoes and
  • cucumber)
  • 4 spring onions finely sliced

Dressing

  • 2 table spoons of oil oil
  • juice of 1 large lemon
  • salt to taste
  • 1 tablespoon sumac (optional)

Direction

  1. place all ingredients into a large bowl
  2. mix the oil, lemon and salt and to the salad.
  3. Toss salad
  4. Sprinkle over with sumac
